Hello Everyone! Today I am going to be sharing some of my favourite recipes that I have been cooking frequently over the last few months. Some are my staples and others are new ones that I have discovered during my time inside.
Bread

This is a recent addition to my favourite recipes. As you know we have shielded throughout the last year, and we found this was a good way to make use of the ingredients we had in the cupboard and it also ensured that we didn't run out of bread. It is just a simple recipe that we found on the BBC website: Easy White Bread.
A tip that we do when we bake it to make it a bit more interesting than just standard white bread, is to add any sort of seed. We use poppy seeds and pumpkin seeds, as they just give it a nice flavour and crunch.
Nachos

This is also another new one I have discovered in the last few months. I actually saw the idea on a YouTube video. You can make them with either beef or turkey mince, my family are trying to limit our intake of red meat so we opted for turkey mince. I love this dish as it is a great way to have a variety of vegetables, as you can just bung pretty much anything on top of them that takes your fancy. You can find many different recipes of nachos, but this is the one I choose: Crispy Turkey Nachos.
A tip that we do when we cook it is to ensure that the nachos are evenly spread as we learnt from having them too close together that it all sticks in one clump. I also feel this is a good one to go for if you fancy a takeaway as it is quite rich and I would only choose to have it a few times a month as a treat.
Salmon Stir Fry

This is one of all my all time favourites. It is so easy to do and you can substitute any meat/fish or you can also have it as a vegetarian meal. We choose to have it with salmon which is one of my favourite fish.
There is not too much to say about this one, just that we have it on the regular. The recipe is one that actually uses beef but like I said, you can easily have chicken, cod etc: Spiced Sesame Spiced Beef.
You can also adjust the amount of each ingredient as I have found that you don't need to be precise, which I think is beneficial because sometimes you want more of a rich flavour, other times you want a more toned down flavour.
Pancetta Pasta

This is one of my all time favourite dishes. I actually discovered it in a magazine when I was waiting to have my hair cut! Since then it is my go to dinner and I love it. I am so glad I snapped a picture of this recipe, my family also are a big fan of it.
I unfortunately cant find the original recipe because of how I came across it but I have found a similar one that you can mess around with to make it how you like: Pancetta Pasta.
One of my top tips would be to use a wok frying pan as it helps everything to cook better, especially the wine.
Haddock and Cabbage

Out of all of the recipes I have discussed, this is probably the one that takes the longest as there is a lot that goes into it. Despite that fact, it is delicious, it may not look appealing but the favours just melt in your mouth. I discovered this one in a cookbook that we have had for years and never touched, which is the Rick Stein Taste of The Sea one. Recently, I have been trying to experiment more with food and this was one of the ones I tried first. Talk about going in the deep end! I cannot track down the recipe so I will leave it at the end of the post.
A tip I would give for this is that the timing is really important as this is one of them dishes that once dished up, should be eaten right away to make the most of it. You also require the use of all the hobs so it can be a lot to juggle which is why I usually have one of my parents to help me.
Kinder Bueno Brownies

Finally, a dessert! One of the only ones I make as I do not really dabble in that area, I much prefer cooking to baking. However, these brownies are a lockdown discovery and if done right, they are the perfect brownie.
I have recently tried to branch out to experience more puddings but I mostly revert back to this recipe. They usually last up to around five days and the person who created the recipe also have many others, so if your looking for any desserts, that would be a good place to browse. The recipe: Kinder Bueno Brownies. My picture definitely doesn't do the brownie justice but trust me they are good.
A tip that we found was to miss out the Kinder Bars as we weren't a fan of them and we also found it make them not as soft and gooey, and just to include the Kinder Chocolate little bars. Another tip is when they do start to become a little stale, to pop one in the microwave and melt it slightly, making it taste just as nice as when they first were cooked!
We currently source our beef from a friend of my Dad's who has a herd of grass fed pedigree Hereford Cattle in Gloucestershire: Sandy Hill Mob. We have a delivery every couple of months of both a variety of beef cuts and pork from Eastleach Farms Organic pork, it's worth paying that little bit extra for quality meat in my opinion.
